The name comes from the sticky texture of the beans after processing. The skin of the cherry is removed, but the mucilage—the sticky part—is partly left on. This leftover mucilage influences the bean's color during drying; the more mucilage, the darker the bean becomes, ranging from honey black, gold, or red, to honey yellow or white.
The drying climate also plays a role; more humidity results in a darker bean. This meticulous process enhances the coffee's body and brings out sweeter flavors compared to washed beans, offering you a rich and aromatic cup that truly embodies the essence of Colombian coffee.
